These golden, flaky pastries are generously coated with sesame seeds and baked until crisp. A beloved traditional snack from Taizhou, Zhejiang, perfect for summer with their light, nutty flavor.

all-purpose flour
warm water
about 110°F
vegetable oil
plus more for brushing
salt
sesame seeds
toasted or raw
sugar

In a large bowl, mix flour and salt. Add warm water and oil, stir until a dough forms. Knead on a floured surface for 5 minutes until smooth. Cover and rest for 20 minutes.
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Divide dough into 8 equal pieces. Roll each into a ball, then flatten into a disc about 4 inches in diameter.
Brush each disc lightly with water or oil, then sprinkle generously with sesame seeds (and sugar if using). Press seeds gently into dough.
Place pastries on prepared baking sheet. Bake for 18-20 minutes until golden brown and crisp.
Cool on a wire rack. Serve warm or at room temperature.
