台州芝麻饼
Taizhou Sesame Pastries are a traditional Zhejiang baked treat, featuring a flaky layered dough filled with a sweet or savory sesame mixture, then coated with sesame seeds and baked until golden. They are commonly enjoyed during the autumn season, especially during the Mid-Autumn Festival, when families gather to make and share these pastries. The pastries have a crisp exterior and a tender, aromatic interior, reflecting the rich culinary heritage of Taizhou.

Prepare the dough: In a large bowl, mix 300g flour and salt. Add warm water and 30ml vegetable oil. Knead until a smooth dough forms. Cover and rest for 30 minutes.
Prepare the oil dough: In another bowl, combine 150g flour and 100ml vegetable oil. Mix until a soft dough forms. Set aside.
Prepare the filling: In a bowl, mix ground black sesame seeds, sugar, 50g flour, 50ml vegetable oil, and five-spice powder until well combined.
Divide the main dough and oil dough into 12 equal portions. Flatten a portion of main dough, place a portion of oil dough in the center, and seal. Roll out into a rectangle, then fold into thirds. Roll out again and fold. Repeat once more. This creates layers.
Roll the folded dough into a circle, place a tablespoon of filling in the center, and seal. Flatten gently into a disc.
Brush each pastry with egg wash and coat with white sesame seeds.
Preheat oven to 180°C (350°F). Place pastries on a baking sheet lined with parchment paper. Bake for 20-25 minutes, until golden brown.
Remove from oven and let cool slightly. Serve warm or at room temperature.
