台州芝麻饼

all-purpose flour
plus extra for dusting
warm water
about 110°F
vegetable oil
plus 2 tablespoons for brushing
salt
sweet red bean paste
store-bought or homemade
white sesame seeds
for coating
sugar

In a large bowl, mix flour and salt. Gradually add warm water and 1/4 cup oil, stirring until a dough forms. Knead on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let rest for 20 minutes.
Divide the dough into 8 equal portions. Roll each portion into a ball, then flatten into a disc.
Place a spoonful of red bean paste in the center of each disc. Fold the edges over the filling and pinch to seal. Gently flatten into a round patty about 1/2 inch thick.
Brush the top of each patty with a little oil, then press into sesame seeds to coat evenly. Place on a baking sheet lined with parchment paper.
Preheat oven to 375°F (190°C). Bake for 15-20 minutes, until golden brown and crisp. Sprinkle with sugar if desired. Serve warm.
