Heat oil in a large pot over medium heat. Add onion, garlic, and ginger; sauté until fragrant, about 2 minutes.
Add sliced meat and cook until browned, about 3-4 minutes.
Stir in carrot and tomato; cook for 2 minutes.
Pour in broth, soy sauce, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
Add noodles and cook according to package instructions, usually 5-7 minutes, until tender.
Stir in spinach or bok choy and cook for 2 more minutes until wilted.
Taste and adjust seasoning. Serve hot, garnished with spring onions.
